EASY PIŞI CHEESE BÖREK


1 cup yoghurt
1 glass water
1 coffee spoon baking soda
1 coffee spoon salt
1 egg
750 gr flour (enough to make soft dough)
Feta cheese and cut parsley for filling.
Sunflower oil for frying

Mix yoghurt, water, egg, baking soda and salt.
Add flour (not all in once) and make a soft dough. Check if you need more or less flour/water.
Let rise 30 min, form balls and roll them to round shapes.
Fill with cheese and use a saucer to close, or use a fork.
Fry in hot oil.

Afiyet olsun

Kaymaklı poğaça (cream buns)

1 kg flour
1.5 cup whole milk
250 ml cream
1 block yeast (42 gram)
2 egg whites
1 teaspoon sugar
½ tea glass oil
3 tsp salt

For filling: feta cheese with chopped parsley or minced meat
1 eggyolk and splash of milk

Dissolve yeast in warm milk and sugar. Let stand until dissolved.
Add flour in a bowl and stir the salt into it. Make a hole in the flour and add the yeast mixture and the remaining ingredients in it.
Knead well until a smooth dough. Let rest half an hour.

Fill the buns with cheese or meat mixture).(Make an incision and fold open) let the buns rest 10 minutes. Cover with beaten egg yolk mixture. Bake in oven at 175 degr.


Grilled vegetables bread

1 paprika
1/2 courgette
1 eggplant/aubergine
1 onion
mozarella
pesto
salt and pepper
olive oil








Slice the vegetables in thin slices, and add on an oventray.  sprinkle some oil over the vegetables and let them bake brown. Salt and pepper for the taste.

Cut a roll in half en fill it with vegetables and mozarella.

MINIPIZZA (TURKISH RECIPE)

1 kg flour (+ extra if dough is too wet)
700 ml lukewarm whole milk
1 tsp sugar
4 tsp salt
2 tbsp (olive) oil
42 g yeast (square block for sale in Turkish stores)


DOUGH:
Dissolve yeast in a little lukewarm milk.
Stir flour, sugar and salt in a large bowl.
Add yeast mixture and knead well.





Knead dough so that air goes out, always turn around and good with  fists to make a stiff dough, if too wet then add some flour. Cover the bowl and let dough rise in 45 min (I put a chair in front of the warm oven, but you can also put the bowl of dough in another bowl with hot water).



In then meantime you can cut vegetables and make the sauce. 

FILLING: egg, mushrooms, onions, peppers, olives, and cheese OR basicilum raw meat, onion, diced tomatoes, tomato sauce, chilli flakes, parsley, salt, pepper pieces.

SAUCE: olive oil, garlic, peppers, tomatoesjuice oregano, basil.

Let tomato cubes simmer



Add diced tomatoes and let simmer.
If tomatoes are soft or tomato / diced canned there and season with oregano, basil and salt.


The dough should be grown in volume and soft feel.
Knead again and form small balls. Roll it into 1 cm thick pizzas


Brush edges with oil

Top the pizzas with a layer of tomato sauce, stuffing and cheese.

Let rise little and  brush the edges with oil.
Bake at 200 degrees C.

BREAD WITH MOZARELLA TOMATO


Arrange a sandwich with slices mozarella, tomato and basil
Bake 20 minutes in the oven

QUICK PANPIZZA


QUICK PANPIZZA

4 sandwiches without crust
cheese
onion rings
tomato parts
olives cut in parts

Melt some butter in a frying pan. Place the 4 slices of bread in it.
Cover with cheese, onions, tomatoes, olives and/or other tasty ingredients.
Sprinkle with grated cheese and put the lid on the pan.

Allow 10 minutes very soft bake until the cheese is melted and crusty soil.

PARTY SANDWICH LOAF

Ooops a recipe from the 1950's ..Looks like its from a candyshop but the taste is very different.
I was ispired by an American recipe and made my own green loaf! But with less calories.... Where's the party:-))
Here we go!!!

1 bread sliced in length in 4 layers

CHOOSE 3 SALADS FOR FILLING:

CELERYSALAD: 1 grated celery root, 2 tablespoons mayonnaise, 1 tablespoon yogurt, 1 diced apple, lemon juice, salt and pepper 1 tbs sugar)

EGGSALAD: 150 gr cheese 4 hard boiled diced eggs, 3 tblsp mayonnaise , 1 tbsp yogurt, salt and pepper, dill or parsley.

CHICKENSALAD: 4 chicken breasts cooked and cut into small pieces, 2 tablespoons mayonnaise, grated ½ sellerieknol, salt and pepper

CHEESE NUT SALAD 1 package cream cheese, finely chopped 100 gr pecanuts, 4 drained sliced pineapple rings.

TUNA SALAD: 1 can of tuna from leaking, 1 tablespoon mayonnaise, 3 tablespoons ketchup, 5 chopped pickles, salt and pepper

Glaze: 2 packages cream cheese, 100 ml crème fraise, foodcolouring.
Stir everything together.


Mix all ingredients together. Spread each layer with a bread salad. And work off the loaf with glaze, decorate with egg, olives, parsley and carrot.



If you dont want to use commercial foodcolouring, see below for a natural alternative for different (less intensive)colors. :
  • Pink = berryjuice, beet juice,
  • Reddish pink = juice of boiled raspberry (remove pulp)
  • Orange = orange syrup, or
  • Yellow = concentrated orange juice or saffron or a little turmeric powder mixed with little hot water
  • Violet blue - boiled juice of blueberries (remove pulp)
  • Green - spinach juice with turmeric powder.
  • Brown sifted cocoa, coffee powder or carob powder.

VEGETARIAN PIZZA

(Makes 4 large (28 cm), or eight thin pizzas)
600 gr flour
2 teasp salt
15 gr fresh yeast (or 4 grams instant yeast)
2 teaspoon salt
4 tbsp olive oil
3,5 dl warm water
1 can (400 gr) peeled tomatoes
Pepper and salt
Fresh basil
200 gr yellow cheese
2 Roasted yellow and red paprika
3 onions
100 gram champignons

Put yeast in a cup. Add 1/2 dl of lukewarm water. Mix well. Wait about 5 minutes for the yeast to activate.
In a large mixing bowl, add sifted flour, salt, olive oil, 1 cup of warm water and the yeast mixture. Mix this with a fork to get all the liquid absorbed by the flour.
Knead the dough for 8-10 minutes or until the texture is smooth and uniform. If the dough seems a little sticky, add a little more flour. One method to knead, is to lean on the dough with the palm of your hand. Press the dough to the mixing surface. Fold the dough and repeat.
Place the dough in a bowl and drizzle with olive oil. Place bowl in draft free area and cover with a cloth.
Let the dough rise for about an hour. Punch down the dough and wait about 45 minutes. Your dough is now ready. Divided now in 4 or 2 pieces.
Let the tomatoes drain and chop them. Season with salt,pepper, basil and thyme.
Warm 2 tbsp olive oil and simmer some garlic in a little pan and add the tomato-mixture. Let simmer and take of the heat. Let cool.
Roast the paprikas and let cool. Chop onions and chamignons and paprikas in small slices.
Dust a rolling pin with flour and gently roll out on a floured mixing surface. until the dough is the desired shape. Keep using flour, as needed so the dough won't stick.
You can also just use your fingers to shape the dough!
Dust a cookie sheet with corn meal or use bakingpaper Use a spatula and slide the dough onto the cookie sheet. Add some tomatoe-sauce, cheese, the rest of the vegetables and at last some cheese.
Bake 30 minutes at 200 degrees in oven .

Peynirli poğaça - Turkish breads with cheese


1 coffeespoon sugar
42 grams fresh yeast
2 waterglasses of lukewarm milk
1 raw eggyoke
4 teaspoons salt
1 waterglass sunflouroil (or other oil)
1 kilo flour
For filling: grated yellow cheese and italian herbs

Put sugar, yeast, milk and eggyoke in a glass and let it work (the yeast will not solve). Put this mixture to a bowl and add salt, oil and flour (sifted)
make a dough with your hands, work it out very good.
If dough is too dry then add a bit of milk
Let rise in 30 minutes (i sometimes put the bowl into a bigger bowl with a little bit of warm water in it so it will be heated)

Divide dough into small rounds and work it out with and (okla) round wooden stick. until 1cm thin.
Fill these rounds with yellow cheese and herbs and paprikapowder , or minced meat, or white (feta) cheese with parsley. There are also many other fillings you can use like spinach.
Close the rounds by flip back both sides together
Put breads on a baking tray and pour eggyokes with oilmixture over it. Sprinkle grated cheese on top and bake in 25 minutes at 250 degrees Celcius

Etli poğaça - Turkish breads with minced meat


1 coffeespoon sugar
42 grams fresh yeast
2 waterglasses of lukewarm milk
1 raw eggyoke
4 teaspoons salt
1 waterglass sunflouroil (or other oil)
1 kilo flour

for minced meat: 250 grams lambs or other minced meat
2 onions (finely chopped)
4 big tomatoes (peeled and finely chopped)
1 pepper
parsley
salt and pepper
sambal or
first make mincedmeat, by baking the onions in a bit of oil and later pepper. add now meat and bake good...after that add tomatoes(if you wish also tomatoepaste) and salt and pepper
