1 pinch salt
3 eggs
2 dl milk
Filling
1 onion
1 small zucchini
1 small eggplant
1 red pepper
5 Tbsp olive oil
Salt and pepper
150g grated mature yellow cheese
Pour per small shoots milk to this mixture. Keep stirring until you have a smooth batter.
Peel the onion and cut it fine, cut the zucchini, pepper and eggplant into cubes.
Heat 3 tbsp oil in the pan and fry the onions over low heat. Add the other vegetables on high heat and let bake 5 min.
Take pan from heat and stir in the cheese with the vegetables. Season to taste with salt and pepper.
Grease an oven dish and divide the vegetable mixture over the bottom. Spoon the batter over it and sprinkle with a little olive oil.
